3 l beef broth, 1 bay leaf, 1 tblsp. black peppercorns, Salt, 1.5 kg lean beef (boiled fillet of beef, if necessary order from the butcher in advance), 300 g root vegetables (e.g. carrot, celery root, parsley root), 1 tblsp. chopped chives
